At the feet of the hill of Montalcino rises the winery Canalicchio – Franco Pacenti, now being known since a lot of years in the wine world thanks to its excellent wines, Rosso and Brunello di Montalcino.
But in the property of the Pacenti’s family, where the bond with farmers traditions and manners is still strong, they also produce an exquisite extra virgin olive oil. Around the estate, in fact, there’s a small olive grove that act as a portrait and produces high quality olives of three different varieties: Frantoio, Moraiolo e Leccino.

The olives are usually harvested between the end of October and the beginning of November, and immediately in the next 48 hours they’re cold pressed in a near small olive mill to extract a prestigious extra virgin olive oil of a green colour with golden shades. Its perfume recalls the olives and is fruity, fresh. Its taste is bitterish-spicy with remembrances of artichoke green leaves. This extra virgin olive oil with this so particular taste can be enjoyed alone or can be used to season soups, especially the ones from the Tuscan tradition, as well as salads of every kind, legumes, bruschetta or pinzimonio dipping sauce.
